These beans come from Finca Monte Azul Coffee - one of the best growers and processors of coffee beans in all of Mexico!  The beans derive from Catimor and Bourbon verity and are carefully hand-picked through a labor-intensive practice to ensure the highest standards of quality.  The beans are washed and placed in a fermentation tank for 72 hours before being sun-dried.  This makes the beans intensely robust and flavorful with a silky body.
